•1 cup cooked quinoa
•1/2 cup black beans, drained and rinsed
•1 cup cherry tomatoes, halved
•2 large eggs
•2 tsp. EVOO, divided
•1 tsp. red wine vinegar
•dash of salt
1. Cool quinoa as directed
2. Add kale to cook with about 5 minutes left
3. While quinoa is cooking, whisk together 1 1/2 tsp of oil, vinegar and salt
4. Cook egg with remainder oil in skillet over medium and cover until whites are set and yolk still runny
5. Combine quinoa, kale, beans, tomatoes, and drizzle with dressing
6. Too with egg and avocado
8. Feel powerful
