Turkey Stuffed Bell Peppers

Simple, nutritious anddd delicious. These are a few of my favorite thingsss ❤
INGREDIENTS
-4 red bell peppers
-2 tsp EVOO
-1 lb lean ground turkey
-1 tsp chili powder
-1 tsp garlic powder
-1 tsp cumin
-1/4 tsp pepper
-1/4 tsp sea salt
-1 can corn, drained and rinsed
-2 cups cooked quinoa
-1 cup tomato sauce
-1 cup shredded mozzarella cheese

DIRECTIONS
-preheat oven to 375
-halve peppers and place skin side down in baking dish
-cook turkey on skillet with EVOO until no longer pink
-add chili pepper, garlic powder, cumin, pepper, sea salt
-mix in corn, quinoa and tomato sauce and simmer
-add 1/2 cup of turkey mixture to each pepper half, cover with foil and bake for 30 minutes
-remove foil; top with cheese and bake an additional 3-5 minutes
