Black Bean & Corn Salsa

My all-time favorite salsa!


  • 15 oz can black beans, drained and rinsed
  • 15 oz can yellow corn, drain and rinsed
  • 2 avocados, cubed
  • 1 red bell pepper, chopped
  • 10-15 cherry tomatoes, quartered
  • 1/3 cup white wine vinegar
  • 1/4 cup fresh cilantro, chopped
  • 1 Tbsp garlic, minced
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • juice of lime
  • dash of salt and pepper

Mix all ingredients together in large bowl. Cover and refrigerate for 1 hour.

Serve with homemade tortilla chips 🙂
