Healthy Chicken Stir Fry

After a day long nap yesterday, Joel reminded me that Saturday, after our tailgating festivities, I ate a whole log of cheese. With a whole box of crackers. In one sitting (after a drank a whole lotta beer). Gross. It’s official. I need to get my shit together.

Enter: 21 Day Fix Extreme. And I mean extreme.

I just finished day one and I already feel better and less sluggish. I wasn’t joking when I said I napped alllllll day yesterday. It was the most lazy, non-productive Sunday I have had in a long time. And I still felt the effects this morning.

But I got in my Dirty 30 Extreme workout anyway and was in tune with my nutrition. I had Shakeology for breakfast and lunch, a snack and cooked this fabulous & easy dinner:

Fix Approved Chicken Stir Fry

Ingredients:

*1.5 lb chicken breast
*Coconut oil
*3 eggs
*Rice (I used Seeds of Change 90 Second Quinoa & Brown Rice)
*Frozen organic stir fry veggies
*Organic low sodium soy sauce

Directions:

*Cube chicken and cook with coconut oil for about 8-9 minutes, until no longer pink
*While chicken and veggies are cooking, scramble the eggs then set aside
*Cook packet of rice
*Add 1 bag of frozen to pan and cook with coconut oil; heat until thawed
*Add eggs, rice, and cooked vegetable to chicken
*Add 2 Tbsp soy sauce
*Mix all together

One portion = 1 red, 1 yellow, 1 green, and 1 orange!
